3 Slices of Happiness to Kick-Start your Day!

So often, toast is overlooked as an uninteresting choice only relegated to diner breakfasts or something you eat when you’re feeling under the weather. However, when done properly, toast can transform to be the perfect vehicle for all different types of ingredients!

Not only can toast be incredibly versatile, but it can also be quick! Getting creative with your toast is also a great way to use up any leftover ingredients in your fridge or pantry.

Below are three ways you can take a simple slice of toast and easily make that into a meal. All of the recipes can be made with 10 ingredients or less and ready in under 10 minutes. We’re using sourdough but you can use any hearty bread you like. 


Asparagus & Egg Toast

Serves: 1

Perfect for a simple breakfast, this toast features the bright Spring flavor of asparagus marinated in lemon juice.

  • 1 slice sourdough bread, toasted
  • 1 tablespoon goat cheese
  • 4-5 asparagus spears
  • 1 tablespoon lemon juice
  • Pinch salt
  • Pinch ground black pepper
  • Pinch red chili flakes
  • 1 egg, hard-boiled or soft-boiled (depending on preference)
  1. Using a vegetable peeler, create asparagus ribbons and toss with lemon juice, salt, pepper and chili flakes. Set aside for 5 minutes.
  2. Spread goat cheese on the toasted sourdough bread and top with the asparagus ribbons.
  3. Place sliced egg on top of the asparagus and serve immediately.


Vanilla Cardamom Toast with Apricots

Serves: 1

A sweet take on toast, apricots and cardamom pair perfectly with a tangy yogurt topping.

  • 1 slice sourdough bread, toasted
  • 3 tablespoons plain yogurt of choice (Greek yogurt, goat yogurt, soy yogurt, etc.)
  • 1 teaspoon maple syrup
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cardamom
  • Pinch salt
  • 1 small apricot, sliced
  • Mint, for garnish
  1. In a small bowl, stir together the yogurt, maple syrup, vanilla, cardamom and salt.
  2. Spread yogurt mixture on top of the toast until evenly covered.
  3. Place apricot slices on top of the toast and garnish with mint.


White Bean & Avocado Toast

Serves: 1

This vegan avocado toast is pumped up with extra protein from white beans and sunflower seeds while nutritional yeast gives it a cheesy flavor.

  • 1 slice sourdough bread, toasted
  • ½ cup white beans, drained and rinsed
  • ½ avocado
  • 1 teaspoon lemon juice
  • 1 teaspoon nutritional yeast
  • ⅛ teaspoon sea salt
  • ⅛ teaspoon red chili flakes
  • ⅛ teaspoon ground black pepper
  • ½ teaspoon sunflower seeds
  • ¼ cup sprouts of choice (sunflower sprouts, alfalfa sprouts, broccoli sprouts, etc.)
  1. In a small bowl with a fork, mash together the white beans, avocado, salt, pepper, chili flakes and nutritional yeast.
  2. Spread on top of the toasted sourdough and sprinkle with sunflower seeds
  3. Top toast with desired sprouts.
