Yes, you heard that right. Sweet potato as toast. Trust us on this one.

Simply by swapping out regular bread for some slices of toasted sweet potato, not only are you adding a unique flavor to your morning toast but also getting a powerful punch of nutrition. Sweet potatoes are loaded with Vitamins A, C and several B vitamins along with important minerals like manganese, copper and potassium.

By pairing the fiber rich sweet potatoes with peanut butter and yogurt which both contain healthy protein and fats, you can ensure this breakfast will keep you full all morning long. A simple chocolate drizzle adds some sweetness along with the antioxidant power of the raw cacao.

Peanut Butter & Chocolate Sweet Potato Toasts

Serves: 1

Preparation Time: 15 minutes

Ingredients:

4 slices of sweet potato, about ¼” thick

2 tablespoons smooth peanut butter

¼ cup plain yogurt

1 teaspoon cinnamon, ground

2 tablespoons maple syrup, divided

3 tablespoons coconut oil, melted

2 tablespoons raw cacao powder

Pinch sea salt

Cacao nibs

Preparation:

  1. In a toaster, toast the slices of sweet potato until lightly browned on both sides. Depending on your toaster strength & max temperature, this can take between 5-15 minutes*.
  2. Spread peanut butter on each of the slices. In a small bowl, whisk together the yogurt, cinnamon and 1 tablespoon of the maple syrup. Top each sweet potato slice with the yogurt sauce.
  3. In a clean bowl, combine the maple syrup, coconut oil, cacao and sea salt until smooth. Drizzle over each sweet potato slice.
  4. Garnish with cacao nibs before serving.
*Note: Sweet potato slices can be made in advance and stored in the fridge for up to one week in a sealed container.
